They originated in Oaxacca, Mexico, and were one of the first cultivated crops of the New World by the Ayocote family. They are traditionally grown all over central and northern Mexico. The Ayocote Negro bean are firm and yet not starchy. They also have a darker, inky bean broth than other runner beans. The best way to enjoy them is cooked, that easy you can enjoy their fully developed flavor.
