This is a Wisconsin classic with a Detroit connection, you can find it on many a cheesehead's plate or sandwich, but it can also be found on any Detroit-style pizza. Like deli muenster and Alsatian muenster had a baby. We always have a Brick of Widmer's Brick on hand. If you are trying to master the art of Detroit Pizza at home you want to use 1 part Brick Cheese and 1 part low moisture mozzarella.
