Bay Blue is what we think of as a gateway blue. Point Reyes Farmstead Cheese Company makes this Blue cheese with a natural rind and sweet paste that balances the salt and funk of this blue. It is amazing in salads or on a burger. Try it with a dark chocolate bar from Madagascar for a special treat.
