The slow-culturing process allows the sumptuous flavors of Manchester to shine. Featuring a luscious cream line just beneath a thin, wrinkly geotrichum candidum rind, the dense and slightly earthy paste begins with a fudge-like texture that evolves into an ooey-gooey, decadent treat once aged beyond two months. Don't be afraid to see mold growth, the rind is always aging and changing, give it a little scrape off, and it's as good as new.
