    We call Foxglove a goo-bomb when it's aged a bit. When it's young it has a soft center with a gooey rim around the rind. It is a washed rind cheese, which means it has a tackie outer edible rind and is has a bit funky taste and smell. If you enjoy taleggio style cheese think about giving this a try!
