Rishi - Iron Goddess of Mercy Oolong Tea
Crafted from the Cui Yu Jade cultivar. Handpicked tea leaves were harvested from an ecologically managed old-growth garden in central Taiwan. This tea goes through a process of medium oxidation, ball-roll shaping, and moderate initial roasting to create the base tea. Then after some weeks of resting the batch an artistic and old-school baking regimen that takes several more weeks is employed to complete the tea. Bringing out a sort of caramelized sweetness and creamy aroma due to the Maillard reaction the same transformation that occurs in baking bread, roasting sweet potatoes, or roasting coffee. This tea is deeply baked in the Nong Xiang, or deep fragrance style. Be sure to rinse the tea to warm up the tea leaves and smooth out the flavor a bit before commencing your Gongfu Cha brewing series of multiple infusions.
