Manchego didn't get its name protection until the 1980's. So even though this cheese dates back to the times of Don Quixote, it has been made in an industrial world and its recipe was not codified until modern times. El Trigal is a company that practices the age-old Co-operative method, encouraging small family farms to raise reasonable size herds and then pool their milk together. This cheese gives you a bolder side of the sheep milk story. It is a nutty and deep cheese with good crystal development. It pairs beautifully with some quince paste aka. membrillo.
