If you need goat cheese to snack on or melt, this is a winner. Garrotxa has been made for hundreds of years, but almost went extinct in the '80s. Luckily, it experienced a resurgence and is now one of our all-time favorite aged-goat cheeses. With its white pepper finish, this cheese goes well with floral white wines.
