In the Basque region, this cheese is named after the mountain facing the farm, 'Le Nez de Napoleon', and the range had a resemblance to the profile of the cheese. Matured for 15-18 months and made with sheep mile only from spring and summer milkings, to ensure all the maximum flavors of the terroir are retained in this wonderful cheese. Le Napoleon had a mild fragrance and a full-bodied, smooth and gummy texture. the cheese offers up flavors of fresh floral springtime grasses followed by faintly nutty and butterscotch notes.
