The cacao is roasted very gently, allowing you to experience the powerful floral aromas and fruity flavors inherent to this heirloom Nacional cacao. This bar boasts the fruity flavors of fresh cacao pulp and green apple, with a rich chocolatey finish. If you think of funky cheeses this bar would be in that group, BUT it's not stinky funky. The bar is roasted just enough to still be able to taste a little of the fermentation process that happens before roasting. It's a fun bar to try and you don't see too many like it.
