Comté Selected by Essex Cheese
The Cheese - ‘Comte All Day’ This is one of our favorite cheeses in the world. It’s aged in Fort St. Antoine a decommissioned French munitions depot that holds approx 100,000 wheels of cheese. Comte is very similar to Swiss Gruyere and is the number one consumed cheese in France, although they are certainly not all as good as the one we carry. Comte is the cornerstone of Essex Cheese who is one of our preferred importers. They travel to France every six weeks to taste and select wheels of Comté that are up to their exacting standards.
Made by: Cooperative Dairies in the Jura Region of France. Aged by Marcel Petite.
From: Jura, France
Age: Essex cheese selects the wheels based on flavor profile more than age but they are generally in the 12-14 month range.
