From: Greensboro, VermontThe Cheese - You can find Cabot’s cheeses all over the US at grocery stores. They operate as a co-op and make cheese from the milk of over 800 family farms. Clothbound though is with milk from a single herd of holstein cows at Kempton’s Farm, just one of those 800. Since their clothbound cheddar is their flagship cheese, they wanted the milk to be really special and decided that Kempton farm was the place to source it from. After Cabot makes the cheese, they send it cheese to age in The Cellars at Jasper Hill for 9 - 14 months. Clothbound is an approachable but complex natural-rind, bandaged cheddar with a crumbly texture and nutty aroma. The flavor is deeply savory and slightly tangy with caramel sweetness to the finish.
