Blakesville Creamery - Afterglow

A creamy young goat cheese washed with New Glarus Belgian Red beer. The washing lends a fruity, funky, and ever so slightly barnyardy quality to the otherwise tart and creamy cheese. As each wheel ripens, it develops a creamline under the rind that makes for a pleasing texture.

Pairings: Amber ales, wild ales, Belgian beer, sours.
