Bayley Hazen Blue
The Cheese - This is the blue that started Jasper Hills, and has helped grow it to what it is today. The dense almost fudgy paste, is salty, savory, with a really nice lactic backbone. A cheese that impressively balances finesse, and funk. It pairs well with port, imperial stout or even a dark chocolate! We love to eat it with some crisp apples or pears.
